Baby Food Recipe #7: Sweet Potatoes

Sweet Potatoes are one of my favorite dishes at Thanksgiving time. I love the sweet taste. I was excited to make them for Lydia and loved that they are so easy. I used three sweet potatoes (or 'yams'). I preheated the oven to 425 degrees. I poked holes in the sweet potatoes and placed them on the cookie sheet.

I cooked them for 60 minutes or until they are wrinkly. The left potatoes shows what it looks like in the oven. The sweet potato next to that one shows the inside after I took all the potato out. Be sure to let the potato cool for a little bit before scooping all the potato out.

I put the potato in the processor and added about 2 ounces of milk (breastmilk or formula) to the mixture.

I scooped the mixture into ice cube trays for easy freezing. Lydia has not had sweet potatoes yet, but I am sure she will love them as much as I do! Sweet potatoes are relatively inexpensive and the organic sweet potatoes at Target were 76 cents this week. I think I spent $1.50 for three sweet potatoes and have over 12 servings for Miss Lydia.
